Wine and salami, the perfect combination

The second week of visits from Promo 7 in Italy was dedicated to two types of products that together enhance the flavour of Piacenza’s province: Tsalumi from Peveri’s and several wines from Tenuta Pernice and Cantina Sociale Val Tidone.

Salami are well known and appreciated in Piacenza. This is due in large part to it being the soleprovince in Europe to have three products under the European certification “Protected Designation of Origin” (PDO) (see photo 1 below):

These three cured pork products are: Coppa Piacentina PDO, Salame Piacentino PDO and Pancetta Piacentina PDO. The animals are bred in the region mainly fed with local grains and never with silage. The ingredients of the final products include salt and spices, and eachl undergoes different periods of aging: a minimum of 45 days for Salame; 4 months for Pancetta and 6 months for Coppa.

These three products make for excellent company to local wine such as Malvasia di Candia Aromatica or Gotturnio constitutingwhat in Italy we call the “Antipasti” (appetizer). The Malvasia is a white grape that produces light but fruity wines whereas the Gotturnio is a red wine composed of two different grapes (Barbera and Croatina) from which still or sparking wine can be produced.
