The Parmigiano Reggiano and EVO oil realities in Emilia-Romagna Region

On Friday 15th of January, Cohort 7 students visited a Parmigiano Reggiano factory to see concretely how one of the most important Italian PDO is produced. Parmigiano is a hard cheese made with cow milk from specific places of Emilia-Romagna and all specifications about it can be found at http://parmigianoreggiano.com including its book of specifications.
